The philosophy of the Pinino vinification is easy to explain: according to the tradtion of the region both wines, the Brunello and the Rosso di Montalcino are finished in large barrels of Slavonian oak. The only standard applied by Pinino is highest possible quality in the vineyard and in the cellar. Pininos claim is to form a seamless queue with best vinemakers in Italy in accordance withe traditions of the Montalcino region and in harmony with state of the art cellar technology.
A systematic reduction of the harvest is achieved through cropping of the shooths in the Pinino vineyards and hence the quality of the grapes is enhanced significantly. Less grapes, higher quality. In the cellar the traditional methods are extended with modern technology and the deployment of new fermentation tanks. Additionally, the Selector and Selecompact tanks, developped by Gimar are in operation.
